Slice the ftira horizontally. Drizzle a generous amount of high-quality extra virgin olive oil on both the top and bottom halves of the bread.

Apply the Base

Spread the sweet tomato paste (kunserva) thickly over the bottom half of the bread. This creates a sweet, tangy barrier.

Layer the Ingredients

Layer the sliced fresh tomatoes, thinly sliced red onion, flaked tuna, pitted black olives, and capers. Don't be afraid to pile it high.

Season and Serve

Tear fresh mint and basil leaves over the filling. Season with sea salt and cracked black pepper. Place the top half on, press down firmly, and cut into quarters to serve.
